The hard outer semi-sweet chocolate crunch surrounds the soft inner cake. The green layer represents my Italian heritage, the olive oil that coats every meal, the capers that I pick from my 200 year old home on the Aeolian Island of Salina. The white layer is the pristine tablecloth that welcomes family and friends at every Jewish High Holiday, the tallit that covered my shoulders as I stood at the Bimah and took responsibility as a Jewish adult. The Red layer marks the final bite of the cookie—my American blood, the veins of five generations of strong women on my maternal side. The layers are held together by thick marmelatta-the joy that combines each layer into a whole.
